I’m having this on draft, schooner size due to high ABV. That said, I’ve had a couple Barrel Aged ciders and so far, this is the best I’ve had for just a regular, semi dry apple. The flavor is rich, in spite of it being dry. Full bodied without being too sweet or fruity.

Barrel aged for eight months in red wine barrels, made from a blend of Pinova and Snowdrift Crab apples (with added cane sugar, presumably to get the ABV to 8.2%). It has a very full bodied mouthfeel, with a nice but not overwhelming taste. The blend really works well, and the aging helps give it some character and just a bit of funkiness. Overall this is going for a fairly traditional dry cider, and I think it works. And despite the high alcohol level, it does not taste boozy, but it does sneak up on you...
