Bright yellow colour, with an aroma of sawdust and chalk.
Rich, fruit flavour, with a buttery edge, becoming a little sappy and grassy in the aftertaste, before a lingering, chalky, mineral finish.
Intriguing and complex, with ample evidence of its terroir, making a crisp, sophisticated fine cider for the dining table. With less gas this might have had 5 stars from me.
