Catskill

Flavorful barrel-aged cider with notes of cinnamon and blue cheese (!). Made from orchard-grown apples and homestead apples (slightly wild). Unfiltered with a good amount of sediment.

Moderately cloud straw colored pour with heavy carbonation. Moderate to strong wild apple aroma. Taste is bold and tannic with lots of tart apple and earthy flavors standing out. Light to moderate bitterness. Medium bodied. Moderate acidity. Dry.
