From Champlain Orchards’ estate series. 28 cases, released Feb 2019. Made from a single varietal, the crimson topaz. A bit of tartness is masked in more sweetness than we like. We wished for a more complex taste that would have come from blending the crimson topaz with a complementary apple to offset the sweetness.
