This is a so-called "cider ale", which are made in Poland and the Baltic States. A wild-fermented cider has hops, rye, wheat, barley malt, and oats added to it during fermentation, so that the resulting drink is made in the fashion of a cider, but with grains and malt added. The liquid is then flavoured with fresh thyme, and sweetened with honey and apple juice, before being bottle-conditioned.
Caramel brown colour, with an aroma of malt and thyme, carrying a slight edge of apple vinegar.
Fruity initial flavour, with apple and hops evident, before a bitter, sour aftertaste asserts itself. Caramel and toast round off the finish, with just a hint of thyme.
Highly complex, with diverse flavours, characteristic of both an ale and a cider. I can imagine this accompanying pizza very well.
