According to the can, they use “dessert apples and heirloom apples…fermented dry.” Unfortunately that selection of apples, when fermented completely dry (which this is), there isn’t a lot of character left. Most of the flavor you get is from the bourbon barrel, which comes through strongly. It’s not bad, I just wish there was more balance between cider and bourbon barrel.
