The pour is a clear golden hue with low effervescence. The aroma is clean and fruity apple. The taste is off-dry tart apple. The finish is apple and acidic with a note of astringency. It is definitely a tart forward cider.

This cider was made from Mutsu apples with some Enterprise and GoldRush to add some more acid and tannins. I also include a little pear to help balance that acid. It has some great aroma and pairs well with seafood.
