Serendipity

A semi-dry that’s light in color and carbonation. It has a nice fruity aroma. It has a light to medium body. There is a subtle tartness. The slight bitterness and astringency keeps this from tasting overly sweet.

Really like the mildly sweet flavor.

First of all, I love the clean, simple looks of each bottle of cider Castle Hill sells. The Albemarle Pippin apple is featured here, with a very defined taste. The halting of the fermentation brings out the sugars, moving the sweetness higher up. But this sweetness is accompanied by a slight bitterness and tartness, which leaves this feeling drier than what it really is. A sipper or sessionable, however you'd like to drink it.
