Pours deep gold, frizzante, and crystal clear. Sweetness in aroma broadens to include marshmallow and bourbon.
Sharp dessert apples attack, before a flinty and tannic second course. Bubbles foam in the mouth upon sipping, but settle as quickly as they rise, leaving a grassy and lightly bitter aftertaste. Rhubarb emerges in the sweetness, with unripe mulberry balancing in bitterness. Given how sweet it seems it’s going to be at first sip, it emerges exceptionally balanced. The body is moderate, and if told it was a percentage point weaker i’d believe it.
I had the pleasure of meeting the team behind this at Bristol Cider Salon. The small sampler was among the very best of the considerable offerings there, and i strongly recommend this bottle.
