"Dry settler style Cider aged 3 months in American Oak Stein Rye Whiskey barrels from eastern Oregon. Deep whiskey notes and a full oak finish compliment smooth vanilla flavor & apple aromatics. Unpasteurized & bottle conditioned.". Currently only available in Oregon.
This one surprised me...I wasn't really expecting something so completely dry, sour, funky, etc. Its a bit Sidra-like, but with a barrel kick (although I don't pick up much spirit influence). Its a bit more approachable than some (Millstone comes to mind), but definitely not an entry level cider. Moderate barrel influence with a lot of warmth on the finish which made it seem like an Imperial style cider. Citrus, herbal, and smokey notes. Definitely unique and well-crafted. I would have guessed it was wild fermented, but it looks like they added yeast (but not sulfites). I'm usually really into barrel aged ciders, but this one wasn't really to my liking.
