The pour is a clear golden amber hue with high carbonation. The aroma is phenolic and apple. The taste is a semi dry phenolic apple with a slight tartness. The mouthfeel is dominated by the carbonation but definitively has some bitters and a good amount of astringency. The finish is long and phenolic. The astringent and phenols are the main notes in this cider. The acid is sitting in the background almost unnoticed. It grows on you the more you drink. I think the phenolic elements are wood driven versus earthy or farmhouse.
