Very yeasty aroma with a distinctive lack of apple aroma or taste. Surprisingly, despite my difficulty in finding any apple flavor, it presents quite a bit of the astringency and sourness you would find from a apple-heavy dry cider. Fairly refreshing and light, I would recommend Hugues original as a cider to be taken with a meal that seeks to keep the spotlight, because Hugues sure won't steal it.
EDIT: A much more prevalent apple flavor appears later in the glass as the temperature warms a bit. By that point you've lost most all of the carbonation and subsequent sips seem to be of an entirely different cider.
