A surprisingly sophisticated product from a young cidery. The lightness of aroma and initial taste may be, in part, down to the use of champagne yeast. However, the real taste is in the back-end, as the herbal flavours develop in the mouth, before delivering a gentle, woody bitterness in the aftertaste. Impressive and individual.
