Sap Happy

Similar in style to ciders from neighboring Anxo. Quite dry, somewhat Basque, refreshing.

First off, this is a single varietal cider based on a varietal I've never had in a cider before: winesap apples. The can touted it as a light dry cider with floral/lychee/citrus notes. Does it live up to its hype? It's definitely light and on the drier side, but I'm not getting as many tropical notes as I had hoped. Winesap is a traditional American cider apple so it's no surprise this is drinkable, but I think it's not exactly my favorite. I may try one room temperature next time and see if that makes it better.
