Produced as part of Shacksbury’s “Lost Apple Project,” this was made from a blend of wild foraged and cultivated fruit. It has champagne-like effervescence, and a strong, lasting, slightly funky aroma. The bubbles linger, giving an initial light feeling, followed by a full bodied mouth feel. The taste is bold and well balanced. Semi-dry, a bit funky, a bit tannic, but nothing overpowering. Overall a well-crafted, delicious cider.
