Deviation

Comes in a beautiful, iconic, 750 ml champagne-style bottle. This is a limited edition, of just 980 bottles (mine is #049), and is made in the Italian spumante style, followed by a 2 year maturation. Golden colour, with an aroma of ripe fruit and honey. Sharp, crisp, green apple flavour, quickly developing light tannins and wood, culminating in a mineral finish. Despite the heavy carbonation, I quite liked this, and the delicate flavours were a good foil for a birch-smoked Kintyre Cheddar. A refined, well-made cider, suitable for a formal occasion, or perhaps a late, light lunch of antipasti, sourdough, and subtle cheeses.
