Brut Cremant NV

Comes in a 750ml champagne bottle. This is a complex blend of ciders of several vintages. Light amber colour, with an aroma of biscuit, light straw, and a little wood. Crisp fruit, soft tannins, sawdust, and a touch of honeycomb, give way to a dry, mineral finish. Subtle flavours combine to give a refined whole; the blender did well. Much too gassy for my personal taste, but this is clearly well-made. The dryness made this a good match for a rich, creamy Epoisses cheese.
