Pommeau is made by adding about a 1/4 apple brandy to 3/4 apple must. Stick this in a barrel for a year and enjoy. The folks at 2 Towns did a great job! Sweater and lower ABV than a Calvados, this drink is remarkable! I picked up a bottle at Total Wine.

I tried the 2013 harvest / 2015 release. This Pommeau is apple cider brandy + lightly fermented cider, barrel aged one year in French oak. 375ml bottle bought for $25 at the Schilling Cider House in Seattle WA. I'll have to pick up at least another bottle to cellar, as I think this is a great deal. Amazing! Notes of rich ripe apples, oak, dried fruit, leather, brown sugar, caramel, burnt sugar, vanilla, tropical fruit, and peach. Very long warming finish. I love how flavorful this is. Definitely boozy, but the sweetness helps make it more easily drinkable, even when not completely cold. I also have a bottle of their Pommeau released 2 years ago (under their Traditions Ciderworks brand, since absorbed), and much prefer this one, as its sweeter, more complex, and fuller bodied.
