Oliver's Gold Rush ciders are made in collaboration with cider makers from Virtue in Michigan, and Angry Orchard in New York state. Traditional Herefordshire cider apples are slow-fermented in old oak casks with wild yeasts, before a second fermentation in the following spring using added fruit sugar and yeast. Deep amber yellow in colour, and with a strong apple peel aroma, and malty undertones. The strong fruit flavour develops dryness and tannins in the mouth, with just a little funk in the finish. My kind of cider; complex and tannic, but still easy to drink.
